For those who know me well, they know that I am gluten intorent. I know it has become quite a fad, but for me the choice came after struggling with a thyroid issue, gaining weight while eating less and working out more, and being exhausted all of the time. I was also having joint pain and skin flare ups. I friend who had similar issues had suggested I try a gluten free diet. I did and it has been life changing for me. My weight is where it should be, I sleep better and wake up with energy and my skin is clearer.
So from time to time, I will share some resources and favorite recipes to help you if you decide you want to give it a try. I don’t buy a lot of prepackaged, over processed gluten free products, but have found some great options to make delicious and healthy meals.
Bob’s Red Mill products have become a staple for me. I use their Almond Flour to bread chicken and make cookies that are delicious and full of protein. I made cupcakes with almond flour for my granddaughter’s birthday for the gluten free kiddos and got rave reviews. Most of the recipes only have a few ingredients, so they are easy as well. They have other great products including a pizza crust, that if done right, is an excellent substitute for full of wheat original.

Another favorite is Danielle Walker’s blog and cookbooks Against all Grain. Her recipes are gluten free and Paleo. She has an amazing recipe for sandwich bread that is delicious with or without something in between the slices and is tasty toasted as well.

If you love to bake, you need to check out Baby Cakes….this New York City bakery has set the bar high for gluten free desserts. I was able to visit one of their locations a few years back. Items were pricey, as is everything in New York City, but oh so delicious. On a trip to Disney World earlier in the year, I saw that they a location at Disney Springs, formerly known as Downtown Disney. They do ship nationwide. You can purchase their cookbooks and make your own delights at home at a fraction of the cost.
After hearing my friends rave about these companies that deliver ingredients and recipes for you to cook great healthy meals at home, we decided to give a few a try. Our first box from Sun Basket came this week. Tonight we made the steak salad with romesco vinaigrette….so delicious, easy to make and gluten free. I can’t wait to try to other two meals over the weekend. We have Blue Apron coming next week. While they don’t have a gluten free menu, they do give you suggestions on how to make the meals gluten free. Stay posted….more to come.
